Frosting

I just barely whipped this up to decorate some cupcakes. So far it's held shape pretty well.

1/2 c butter - softened
1/2 c shortening
1 tsp vanilla
4 c powdered sugar
2 T milk

Combine butter and shortening. Add vanilla. Mix in powdered sugar, 1 cup at a time. Add milk, and beat until light and fluffy.

The Yummiest Salad Ever

Salad:

2-3 Heads of Romaine Lettuce
Fresh Strawberries
1-2 Cans of Mandarin Oranges
1 Package of Slivered Almonds, Caramelized
(To caramelize, over medium heat, melt 2 Tbsp Butter in pan. Add 1/2 c Sugar and Almonds. Heat until brown and caramelized.)
1/2 lb Shredded Mozzarella Cheese
2-3 Cans Chicken, Shredded

Dressing:

2 Tbsp Poppy Seeds
3/4 c Apple Cider Vinegar
2 c Salad Oil
1 Small Onion
2 Tbsp Mustard
2 tsp Salt
1 c Sugar

Put all ingredients in blender and blend very well. Refrigerate.

Note: This makes about 2 bottles of dressing.
Note 2: The dressing sounds gross, but it is the most delicious thing you will ever taste!!

Hawiian Haystacks!

Simple. Tasty. Hot, cold, soft, and crunchy all in one? ALOHA!

3-4 chicken breasts
2 cans Cream of Chicken Soup
1 can Chicken broth (2 cups)
cooked rice- enough for the family!
Toppings: fresh diced tomato, pineapple chunks, chow mein noodles, chopped celery, green onion, coconut, etc.

In a crock pot, combine chicken breasts, cream of chicken soup, and chicken broth. Cook on LOW for 4-6 hours or until chicken is done and pulls apart easily. Shred the chicken inside the crock pot.
Serve chicken gravy over rice and add your favorite toppings! YUM!

Spinach & Artichoke Dip


This is a delicious recipe, and so easy!

16 oz cream cheese
Parmesan cheese
Artichoke hearts (best if marinated-you can get it at any grocery store-drain the juices)
Small package of frozen spinach (cut, not whole leaf)
Whipping cream

All you really need to do is mix it all together and heat it up.

You can cook this a couple of ways. I usually do it in a crock pot. Some do it in the oven, using a glass casserole dish. There is no rhyme or reason how to cook it. One way is just as good as the other.

It's all to taste-minus the cream cheese and spinach. If you like artichoke hearts, use the entire bottle. I usually use half of the tiny whipping cream carton.

Delicious Dessert

This dessert had been a big hit at many gatherings!

35 OREO Cookies
6 Tbsp.  butter, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup  sugar
2 Tbsp. cold milk
1 tub  (12 oz.) COOL WHIP Whipped Topping, thawed, divided
3-1/4 cups cold milk
2 pkg.  (3.9 oz. each) JELL-O Chocolate Instant Pudding

PROCESS cookies in food processor until fine crumbs form. Transfer to medium bowl; mix in butter. Press onto bottom of 13x9-inch dish. Refrigerate until ready to use.

MIX cream cheese, sugar and 2 Tbsp. milk in medium bowl until blended. Stir in 1-1/4 cups COOL WHIP; spread over crust.

BEAT pudding mixes and 3-1/4 cups milk with whisk 2 min.; pour over cream cheese layer. Let stand 5 min. or until thickened; cover with remaining COOL WHIP. Refrigerate 4 hours.

Place dessert in freezer about 1 hour before cutting into squares to serve.

Mexican Chalupas

This makes a lot. Half it for small families.

1 pork tenderloin ( small picnic roast)

1 tsp garlic powder
1 tsp chili powder
1 tsp cumin
1 large can chopped green chiles
16oz jar picante sauce
16oz green salsa
2 cans pinto beans

Flour tortillas
Grated cheese
Sour cream

Cook roast in crock pot on high 3-4 hours, season with salt and pepper. Remove meat and shred with fork. Rinse out crock pot and put meat back in. Add all the seasonings, salsa, beans and heat until warm. Serve in warmed tortillas & garnish with sour cream and cheese.

Beef Roast

Brown any roast in frying pan sprayed with Pam. Season while browning. Or if I'm short on time, season and no browning...just put in crock pot.

Peel carrots & potatoes, dice and put in crock pot. Add sliced up onion. Add 5 Beef bullion cubes and packet of dry onion mix. Add 1/2 cup water.

Cook on low all day or high 5-6 hours.

Use the liquid from the roast to make the gravy. Pour roast liquid into pan. Mix a couple Tablespoons of flour with COLD water, using a whisk, in a separate bowl or cup, add mixed up water and flour to roast liquid until desired thickness.
